Job Purpose: Reporting to the Head of Fresh, the Head Cook will perform skilled cooking duties and coordinate service to ensure high quality standards of food production and service to support the retail store’s revenue growth. 

Expertise in either of the following cuisines preferred; Swahili dishes, Chinese, Fast foods and other delicacies.

Key Responsibilities
  • Determine how food should be presented and create decorative food displays
  • Determine production schedules and staff requirements necessary to ensure timely delivery of services
  • Estimate amounts and costs of required supplies and institute budgetary controls
  • Inspect supplies, equipment and work areas to ensure conformance to established standards
  • Instruct cooks in the preparation, cooking, garnishing and presentation of food
  • Monitor sanitation practices to ensure that employees follow standards and regulations
  • Analyze recipes to assign prices to menu items based on food, labor and overhead costs
  • Prepare and cook foods of all types either on a regular basis or on order
  • Supervise and coordinate activities of cooks and workers engaged in food preparation
  • Collaborate with other personnel to plan and develop recipes and menus, taking into account factors like seasonal availability of ingredients and likely number of customers
  • Check quality of raw and cooked food products to ensure that standards are met
  • Use food preparation tools in accordance with manufacturer’s instructions
Person Specification
  • Diploma in Food and Beverage management or relevant qualifications in Hospitality
  • Relevant qualification in hospitality related field
  • At least 3 years relevant experience in food service and hospitality in a similar or related role
  • Skilled in setting up stations/displays
  • Committed to practice and checking of food safety
  • Proven record of delivering outstanding customer service by preparing food items constantly and adhering to recipe standards
  • Ability to work efficiently in a fast paced and noisy environment.
  • High standard of personal cleanliness and hygiene
  • Good communicator
  • Reliable, punctual, clean and tidy
  • Selling skills/ Service
  • Ability to work effectively in a team
